Conversely, a cuisine with deep flavors and pronounced aromas will be perfect with a great Medoc wine. The way of cooking is also really important, giving different range of flavors, and must be decisive to accompany wine. Red wine isn’t recommended with spicy dishes. Prefer a sweet wine or even with a very spicy cuisine, a sauternes, that will make a happy synthesis between the fruit, wine sugar and dish spices. Another tip: on a sweet dish or a dessert, avoid the overbidding that is to serve a sweeter wine than the food, such as a sweet wine on a dessert.
